Shredded Pork with Guacamole in Tortillas
Warm and hearty - perfect for the whole family! Best served with diced tomatoes, lettuce and sour cream.

Ingredients:
- 1.5 kg boneless pork shoulder, rind removed, cut into 6 cm pieces
- 2 tablespoons olive oil
- 1 onion, roughly chopped
- 2 garlic cloves, crushed
- 400 g diced tomatoes
- 1/2 cup tomato paste
- 1/4 cup apple cider vinegar
- 1 tablespoon brown sugar
- 1 teaspoon dried oregano
- Pinch of cayenne pepper
- Tortillas
- 2 large avocados, chopped
- 1 small tomato, finely chopped
- 2 garlic cloves, crushed
- 2 tablespoons lemon juice
- 1 red chili, deseeded
Instructions:
- Heat half the olive oil in pressure cooker over medium-high heat. Cook pork pieces in batches until browned. Transfer to a large plate.
- Heat the remaining olive oil in the pressure cooker over medium heat. Add the onion and garlic, stirring often for 2-3 minutes, or until soft.
- Stir in pork, tomato, tomato paste, vinegar, brown sugar, oregano and cayenne pepper. Season with salt and pepper.
- Seal the pressure cooker. Place over high heat until steam escapes at a constant rate and there is a regular hissing sound. Reduce heat to low. Cook for 40 minutes. Release steam following manufacturer's instructions.
- Meanwhile, place avocado in a bowl. Using a fork, mash until almost smooth. Add tomato, garlic, chili and lime juice. Stir to combine. Season with salt and pepper.
- Remove pork from pressure cooker. Shred. Return to pressure cooker. Stir to combine. Season with salt and pepper.
- Serve pork with guacamole dip wrapped in tortillas. Add diced tomato, lettuce and a spoon full of sour cream.
